my friend penny and I have developed a bit of tradition in terms of cakes.
for the past few years we have made each other birthday cakes. and today is penny’s birthday hence pulling out all the stops to make something lovely.
this one was a bit of a different one. lots of eggs, greek yoghurt and lots of fresh vanilla seeds to create a classic sponge. it is topped with a drizzle of icing sugar and more vanilla seeds mixed with water.
fluffy, light and gorgeous hopefully. I am about to find out…

pink icing with pink glitter and a massive hit of strawberry on top of a bite sized little bit of vanilla sponge.
yummy and lethal. they are so small you can trick yourself in to thinking it is ok to eat more than one or two…
erm – so this is my 5th cupcake post in 8 days…
anyway, i found these mini fudge chunks and created a recipe around them.
i took basic vanilla cupcakes and swapped the caster sugar for brown sugar. the icing is buttercream (no cream cheese) with extra vanilla. it gave a lovely dark caramel-ly sponge.
